Mexican Meatloaf

Meatloaf with a kick

Ingredients

1 large onion (chopped)
1 large jalapeno pepper (optional if you like HOT)
1 lb. ground beef
1 lb. sausage
3 eggs (beaten)
1/2 cup katsup
1 and 1/2 cups breadcrumbs (I made my own with whole wheat bread to make it a little healthier)
1/2 cup parsley
1 jar salsa (mild, medium, or hot; your choice)
 

Preparation

 





 
Combine ground beef, sausage, egg mixture, katsup, onion, and pepper. Mix well. Add breadcrumbs and shape the meatloaf. Add half the jar of salsa to the top of the meatloaf.

 Bake 350 degrees for one hour(until the center reaches 160 degress and fully cooked. When finished baking add the rest of the salsa to the top of your meatloaf and serve with baked potatoes and warm dinner rolls. Ill share my homemade dinner rolls later.
